Juicy Coffee Crusted Shredded Beef Tacos

Tacos are a special food and coffee is a special drink, why not combine the two?


In this recipe, we are going to use our Roast 005 to create a really simple dry rub for our chunk of beef. 


Coffee may seem like a strange addition, but it can actually add a great BBQ style flavor profile.

Let's get into it!



Ingredients

    • Beef roast / London Broil 

    • ¾ cup Roast 005 Ground Coffee

    • 6 tbsp Salt

    • 3 tbsp Brown Sugar

    • 2 tbsp Oregano

    • 1 tbsp Black Pepper

    • 1 tbsp Onion Powder

    • 1 tbsp Garlic Powder

    • 2 Stalks Celery

    • 1 Carrot

    • ½ Red Onion

    • 6 Garlic Cloves

    • 1 tbsp Ketchup

    • 1 tbsp Beef base

    • 4 cups Water

Directions

Step 1


Set the pressure cooker on high saute setting and allow it to preheat. Do not place the meat into a cold pan, it must be hot to allow the crust to develop.


Step 2

Combine ground coffee, salt, brown sugar, oregano, black pepper, onion powder & garlic powder in a bowl. Mix and set aside.


Step 3

Rub all sides of the beef with ketchup. This actually does a couple things… It helps our dry rub stick to the meat, but also adds more flavor to the dish.


Sprinkle spice rub over meat and cover completely. 

Step 4

Sear all sides of roast making sure to not burn. Remember, there is sugar and coffee on this, both of which if burned will give off bad flavors. We just want to get a bit of color on the meat.


While meat is searing, cut celery, red onion, and carrot - set aside in a bowl. When pressure cooking I tend to cut veggies larger as they cook fast in the instant pot.


These will be blended up later anyways so it doesn't matter what they look like.

Step 5

Remove roast from the pressure cooker and set aside to cool.


Add butter, garlic, and vegetables back into the pot and continue cooking for 10-15 minutes to develop flavor. 


Again, do not let these burn, and also watch the bottom of the pan, if it starts to turn black you need to be careful and back off the heat.

Step 6

Combine beef base & water, pour into pot.


Place beef back into liquid and pressure cook on high for 2.5-3 hours or until tender.

Step 7

Once cooking is finished, set the beef aside and place the liquid + vegetables into a blender.


Blend till smooth and place back into the pot.

Step 8

Using two forks, shed the beef and then place it back into the pot.


Pressure cook again for another 20-30 minutes if it is not as tender as you'd like.

Step 9

Take some of your beef out and strain it to get rid of some of the juices so the tortilla shell doesn't break.

Place meat, cheese, cilantro, and raw onion into the shell and fold. Cook on medium-high heat until golden brown.


Use cooking juices as dipping sauce & enjoy!
